We add ground flax, extra egg and shredded zuccini, and use olive oil for great waffles.

My kids are all sensitive to gluten. I have a very picky eater and she loves these pancakes. I sometimes make them with an egg substitute and they are still delicious. We make them thick sometimes, medium sometimes and very thin at other times. I think they are the best G.F pancake mix around!

This is really delicious. We make it with almond milk, rice milk or soy milk. I'll make a batch and pop the extras in the fridge for another day. Makes excellent waffles, too! Light and fluffy pancakes with no gritty texture. Try adding sliced bananas, blueberries,cinnamon or mini choc. chips. Can't beat the price from Amazon! We love this mix!
